Ingredients:
1 medium sized onion diced
1/2 cup red, yellow, green bell peppers mixed together
1 cup zucchini diced
salt to taste
black pepper to taste
1/2 tsp lemon juice
1 tbsp honey or to taste
1 tbsp olive oil
Method:
- Heat olive oil in a pan and add all the vegetables one by one in order of their tenderness and cook for 2-3 minutes stirring and mixing till they become tender and are not over cooked.
- Add salt and pepper and cook for another minute.
- Switch off the gas and add lemon juice and honey and serve.
